Lemon Balm and custard is a match made in heaven. Here we pair that proven combination with marshmallows for a delightful desert.
butter
6 marshmallows
1 egg
1 ½ Tbs sugar
200ml milk
½ tsp vanilla essence or a piece of vanilla pod
1 heaped Tbs finely chopped fresh lemon balm
cream
Butter a fireproof dish and put in the marshmallows. In a mixing bowl beat the egg and sugar. Add the milk and vanilla and beat well. Pour over the marshmallows. Sprinkle the lemon balm on top. Place the dish in a shallow pan of cold water and bake slowly in a medium oven till set. Serve with thin cream.
