We often host herb-tasting events to give newcomers to cooking with herbs a better idea of how herbs can improve their dining experience. Two firm favourites at these events are Bruschetta with Basil Tomato Topping and Orange Chicken Strips. And with good reason.
They are a perfect pair. Are really easy to make and they are great appetizers or quick snacks. Just perfect for weekend entertaining and Weekend Herb Blogging hosted by Myriam from Once Upon A Tart.
Bruschetta with Basil Tomato Topping
1 loaf French bread
125ml olive oil
3 cloves garlic
Topping:
5 ripe tomatoes, deseeded and chopped
½ cup fresh basil leaves, chopped
Salt to taste
Mix all the ingredients together.
Slice the French bread, place on a baking tray and brush with olive oil. Toast until golden. Peel garlic and rub over the bread slices. Serve with tomato and basil topping.
Orange Chicken Strips
250g chicken strips
125ml orange juice
1 onion, finely chopped
30ml vinegar
2 bay leaves
2ml ground allspice
3 sprigs of fresh thyme, chopped
Mix onion with the orange juice, vinegar, bay leaves, allspice and thyme in a bowl. Add chicken strips and turn to coat. Cover and marinate chicken for 2 hours at room temperature. Remove the chicken from marinade and stir-fry or roast.

I love cooking with herbs. I never like the flavours to be too overpowering but I find that herbs can reduce the need for salt which we are told to reduce in our diets. I have just found your site and will be definately trying some of your recipes - thankyou. I've also seen on Topveg.com that there is a herb day run by Herbday.org on the 13th of October. Are you doing anything on your site or at your nursery?

Your site is fantastic, I've learned so much about herbs in general. I'm diabetic and have not been ill with flu for three years, due to my regular use of different herbs in salads, most meals and medicinally. My most helpful medicinal herbs are nistursiums (excuse the spelling)natural antibiotic, Sage anisthetic,Feverfew or Rue for fever. I'm sure my health is due to regular use of most herbs.
